Banana Cake

Well we had a few very ripe bananas laying around yesterday and you know what that means…..BANANA CAKE!  I have not made this recipe for a very long time and I just could not throw away one more banana. Our love of bananas comes and goes. I always buy them because they are an easy fruit to have on hand. Some weeks they just hang around too long. I call this a cake but it is more like a bar. They are great with or without icing.

Banana Cake

In a small bowl mix:

2 cups of flour (I use 1c. white, 1/2c.  white wheat, 1/2 oat flour)

1 tsp baking powder

1 tsp baking soda

3/4 tsp salt

In your mixer cream together:

1 1/3 cup of sugar

1/2 crisco

1 tsp vanilla

2 large eggs

Add 1/2 cup of buttermilk and the flour mixture with your creamed mixture. I like to alternate the flour mixture and the buttermilk.

Add three to four mashed bananas last

Pour the batter into a 13×9 greased and floured cake pan. Bake at 350 for 35 to 40 minutes.

Icing

1/2 cup of cream cheese

1/2 cup of greek yogurt

1/2 cup regular sugar

1tsp cinnamon

Whip all ingredients in your mixer.

This is yummy served with chai tea!
